Foraging for aromatics is the same basic foundation as foraging for food is.  Cooking is an art form much like creating fragrance & so it came as no hardship to bring to the table (pun intended), in very limited batches, a small line of culinary dry rubs & seasonings.

Inspired by the coastal mountains of California, El Coyote is a true taste of the aromatic woodlands that drape this beautiful landscape.  We collected white & black sages, yerba santa, juniper berries & white fir needle, dried it in-house & carefully blended & balanced these unique flavors.  Locally sourced sea salt was smoked at our workshop for over 24 hrs & we infused organic black peppercorns with mezcal to add a deep, smoky flavor.  

Works well with all types of wild birds & poultry but experiment as you should.  Use sparingly!  Coastal sages are very aromatic & strong & a bit bitter.
